Slow Cooker Beef And Pepper Rice

A delicious beefy rice recipe made in the crock pot. Eat as is, fill a taco or tortilla shell, or stuff in a pita bread pocket.

ingredients

1 pound ground beef
2 green bell peppers, seeded and coarsely chopped
1 cup chopped onions
1 cup uncooked brown rice
2 beef bouillon cubes, crushed
3 cups water
1 tablespoon soy sauce

directions

Heat a skillet over medium-high heat. Add the ground beef, bell pepper, and onions. Cook, stirring, until the beef is cooked and the vegetables are soft. Drain off excess grease. Add the beef mixture to the crock pot.

Stir in the rice, bouillon cubes, water, and soy sauce. Mix well.

Cover the crock pot and cook on high for 1-3 hours or until the rice is cooked and the liquid is absorbed.

Stir before serving.
