Sour Milk Pancakes

ingredients
3 eggs, separated
1 pinch salt
4 teaspoons sugar
1 teaspoon baking soda
1 cup sour milk
1 cup flour
1/4 cup oil
1 teaspoon baking powder
blueberries, fresh or frozen
huckleberries, fresh or frozen
directions
Beat egg whites to a stiff froth. Add egg yolks, salt, sugar, and baking soda. Add sour milk and stir until it is a bubbly froth. Stir in flour. Add oil and heaping tsp of baking powder.
Pour mixture onto hot griddle. Add fruit. When bubbles form on edge, flip and continue to cook.
I often make a double batch and freeze the leftovers. They are great to take camping and heat in microwave.
