Get ready to flip your morning routine with Passover waffles (or pancakes), a kosher-friendly breakfast that's delicious any time of year.

2 egg whites
1/4 cup sugar
3 tablespoons oil
1/2 cup buttermilk
1/3 cup matzoh meal
1/8 cup potato starch
Beat egg whites with an electric beater until soft peaks form. Gradually add sugar and continue beating until stiff, but not dry peaks form.
Using same beaters, beat 1/3 of the egg whites with oil until light, about 5 minutes. Add buttermilk, continue beating. Gradually add dry ingredients. Batter will be thick. Fold in remaining egg whites in two batches.
Pour batter into prepared waffle iron and cook according manufacturer's instructions.
You can also use the batter to make pancakes, cooking them on a hot griddle.
NOTE: Since this recipe uses matzoh meal and potato starch instead of wheat flour, it's perfect for Passover breakfast. You can use the batter for pancakes or waffles.

I didn't beat until stiff peaks but managed to get around it by adding another 1/8 cup potato starch. The first batch was ok but the second got much better with 1/4 cup of honey.
