Tiganopita Me Feta (Greek Feta Cheese Pancake)

ingredients
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1 cup water
1 tablespoon olive oil
1 1/2 cup crumbled feta cheese, divided
freshly ground black pepper
directions
In a medium bowl, beat the flour and eggs with a whisk or an electric mixer until blended, then gradually beat in the water. Cover and let stand for at least 30 minutes, or up to 2 hours.
Preheat the oven to 400 degrees F. Coat an 11- x 7-inch or other 1 1/2 quart baking dish with the oil.
Stir 1 cup of the cheese and pepper to taste into the batter. Pour the batter into the baking dish and sprinkle the remaining 1/2 cup cheese and more pepper over the top.
Bake for 30 minutes, or until the top is golden brown and the sides are pulling away from the dish. Cut into squares and serve warm or at room temperature.
