Caramel Butter Syrup
1 cup white sugar
1 cup brown sugar
1/2 cup butter, cut in bits
1 cup water
Pancakes
2 cups all-purpose flour
6 teaspoons baking powder
1 teaspoon salt
1/3 cup sugar
1 1/2 cup milk
1/2 cup cream
3 eggs
1/3 cup melted shortening or butter, cooled
Combine the syrup ingredients in a saucepan over medium-high heat. Bring to a boil, then reduce the heat to the lowest setting to keep warm.
Preheat a griddle or large, non-stick skillet over medium heat.
Combine the flour, baking powder, salt, sugar, milk, cream, and eggs in a mixing bowl. Beat on high speed with an electric mixer until light and foamy.
Add the melted shortening and beat just until incorporated. Add the batter to the griddle using a 1/4-cup measure. Cook until bubbles form on the top and the bottom is lightly browned. Carefully flip the pancakes over and cook until done.
Serve the pancakes hot with the warm syrup.
The syrup can be made ahead of time and refrigerated. Heat on 50% power in the microwave to reheat.
