Corn Meal Pancakes

ingredients
1/2 cup all-purpose flour
1/2 cup corn meal
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/2 cup boiling water
1/4 cup milk
1/4 cup corn oil
1 egg, beaten
directions
Mix all ingredients in the order given. Do not grease the skillet.
Drop batter into the hot skillet 1 Tbsp at a time to make very small pancakes, 3 or 4 to a small skillet, each about silver dollar size.
They cook very fast since they are so thin, so by the time you pour the third or fourth spoonful of batter onto the skillet, the first one you poured should be ready to turn.

They were great. But, they are a little heavy on the fat.
great pancakes! my life loved them and was impressed!! but when i followed the recipe the batter was too runny so i added another 1/4 cup of wheat flour. then excellent! thanks.

I had recently had corn meal pancakes at a restaurant for the first time & loved them. So when I was craving them again at home, I tried this recipe & it's a winner. It was an easy prep, I had all the ingredients at my home, & the taste fit the bill of what I was craving!
