ingredients

1 1/3 cup buttermilk at room temp
1 teaspoon baking powder
3/4 cup yellow cornmeal
1/4 flour
1 teaspoon salt
1 teaspoon sugar
1 egg
1 tablespoon corn oil

directions

Whisk together buttermilk and baking soda let sit for 5 minutes. Beat egg slightly, stir in oil, add dry ingredients. Add buttermilk mixture. The batter will be very thin.

On hot skillet drop heaping 1 Tbsp. of batter, 1 1/2 minutes on first side and 1 minute on bottom. Serve hot with syrup. They don't need any butter. The kids love them.

  1. Michelle REVIEW:

The recipe called for 1 tsp of salt & 1 tsp of sugar. The pancakes turned out too salty. It didn't rise very nicely...very disappointed with this recipe!!!!!

  2. Guest Foodie

In the ingredient list, it says baking powder. In the directions it says baking soda. Which is it?

  3. rob REVIEW:

We just made the pancakes listed above and added some blueberrys. They were delicious. Much better than mixes. My suggestion would be to substitute butter milk for the milk. I added 3 tbs of sour cream on the second batch and they were even better yet. Highly recommended.
