Peanut Butter Potato Salad

If you're looking for a potato salad that's a little bit different, then give this peanut butter version a try. The combination of ingredients may sound strange, but it actually works surprisingly well.
ingredients
8  Yukon gold potatoes, peeled
3/4 cup thinly sliced celery
1/2 cup chopped green onions
  salt and pepper, to taste
1 tablespoon cider vinegar
2 tablespoons peanut oil
1 teaspoon soy sauce
1/2 cup mayonnaise
1/2 cup creamy peanut butter
directions
Place the potatoes in a large saucepan filled with cold water. Bring it to a boil over medium-high heat and cook for 8 to 12 minutes until the potatoes are tender when pierced with a fork. 
 Drain the potatoes well then rinse them under cold water. Cut the potatoes into cubes and place in a large bowl along with the celery and green onions. Sprinkle the vegetables lightly with salt and pepper. 
 Combine the vinegar, oil, and soy sauce in a bowl and whisk well. Stir in the mayonnaise and peanut butter and mix until smooth and blended. 
 Drizzle the dressing over the potatoes and gently toss to coat the potatoes in the peanut butter mixture. 
 Cover the bowl and chill the potato salad for 2-4 hours.

I'm known for bringing unusual dishes to an annual pot luck we have with friends. This year I chose this peanut butter potato salad as my recipe. Of course, at first it was met with skepticism but after people tried it, it overwhelmingly was a hit. Gave out the recipe to several people.
