Maple Bacon Potato Salad

ingredients
1/4 cup apple cider vinegar
1/4 cup maple syrup
8 slices ready-to-serve precooked bacon, chopped
1 teaspoon chopped garlic, jarred or fresh
1 teaspoon kosher salt
1 bag (2 pound size) refrigerated freshly diced potatoes with onion
1/2 cup shredded carrot
directions
Combine the vinegar, syrup, bacon, garlic, salt, and potatoes in a microwave-safe mixing bowl, cover, and microwave at full power for 4 minutes, until the potatoes are tender.
Or, alternatively, place in a large saucepan and simmer for 5 minutes, until the potatoes are tender. Add the carrot and serve warm or chilled.
