1 pound ground beef
2 cups sliced peeled potatoes
2 cups finely chopped celery
3/4 cup finely chopped carrots
1/4 cup finely chopped green bell peppers
1/4 cup finely chopped onions
2 tablespoons butter or margarine
1 cup water
2 cans (10.75 ounce size) condensed cream of mushroom soup, undiluted
1 can (5 ounce size) chow mein noodles, divided
1 cup shredded cheddar cheese

directions

In a skillet, brown beef. Drain and set aside.

In a large saucepan or another skillet, saute potatoes, celery, carrots, green pepper and onion in butter for 5 minutes. Add water; cover and simmer for 10 minutes.

Add soup and cooked ground beef; mix well.

Sprinkle half of the chow mein noodles into a greased shallow 2-quart baking dish. Spoon meat mixture over noodles.

Cover and bake at 350 degrees F for 20 minutes.

Top with the cheese and remaining noodles. Bake, uncovered, 10 minutes longer or until heated through.

    Is there something you can use besides the Chinese noodles? I have all the other ingredients on hand to make this, but not the noodles. Thanks for any info on substitutes!

    • You need something crunchy. Ramen noodles crunched up might work?

    Very tasty recipe! Made this on a whim for 5 kids and 2 adults. Recipe states it is for 8 people, it served the seven of us very well. My picky kids were having multiple servings. I chose to use low sodium soup mixes (store brand). I was pleasantly surprised at how the flavor of this dish just popped without adding any extra seasonings! This is getting into the family revolving recipes. Could easily prepare the ingredients (cutting and chopping) ahead of time into baggies and be ready in a more timely fashion for hungry families who want their food NOW! Because of accidentally placing noodles on top before cheese, the cheese was placed on top for the last 5 minutes of lid off baking... That was the candy (as quoted by my youngest eater 10 year old daughter).
