Slow Cooker Root Beer Pot Roast

ingredients

4 pounds eye of round or chuck roast
1 1/2 teaspoon salt, divided
1 teaspoon black pepper, divided
1 tablespoon vegetable oil
1 large onion, thinly sliced
1 bottle (12 ounce size) root beer (not diet)
1 bottle (12 ounce size) chili sauce
1 clove garlic, minced

directions

Sprinkle roast evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Brown roast on all sides in hot oil in large Dutch oven over medium-high heat. Add onion and cook until golden.

Place browned roast and onion in slow cooker.

In a mixing bowl, stir together remaining salt and pepper, root beer, chili sauce and garlic. Pour mixture over roast in slow cooker.

Cook on Low for 6 to 8 hours.

    This was so yummy and easy. I put it on before work and it was perfect when we returned home. Had it as a sandwich on King's Hawaiian Hamburger buns, super. I even had it for left overs today and loved it, which is saying a lot as I don't like reheated meat!
