Slow Cooker Apple Cider Pot Roast

ingredients
3 pounds chuck roast
2 tablespoons oil
1 1/2 cup apple cider
1 cup beef broth
1 large sweet onion, cut in thin slices
6 cloves garlic
6 Yukon gold potatoes, cut in half
6 large carrots, cut into thirds
3 stalks celery, each cut into thirds
1/2 teaspoon apple pie spice
1 envelope dry French onion or mushroom soup mix
directions
This can be made in the oven or in a crock pot.
For oven, preheat oven to 325 degrees F.
For crockpot: while you are browning your roast, set your crock-pot at low. You never want to add hot meat to a cold crock-pot
Over high heat, in a large skillet add oil and brown on all sides.
Place your browned roast into a baking pan and add the apple cider, beef broth and the other ingredients.
Cover and roast for 1-2 hours or until the meat is very tender.
FOR Crockpots: Add your browned roast to the pre-heated crock pot.
Add the apple cider, beef broth, onions, garlic and dry soup mix.
Cook on LOW for 8-10 hours, cook on HIGH for 4-6 hours or until tender.
The last 2 hours add the celery, potatoes, carrots.Cook covered until the vegetables are tender.
