Slow Cooker Chuck Roast With Leek

ingredients
Roast
1 1/2 pound boneless chuck roast, trimmed
1 tablespoon extra virgin olive oil
1/4 teaspoon dried rosemary leaves, crumbled
1/4 teaspoon dried thyme leaves
1/8 teaspoon granulated roasted garlic
1/8 teaspoon dried orange peel
1/8 teaspoon salt, or to taste
1/8 teaspoon black pepper, or to taste
2 pinches ground mace or nutmeg
Vegetables
2 cups leafy rib celery, cut into 1/2-inch slices
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro
1 leek, trimmed (remove dark green), split lengthwise, rinsed well
2 tablespoons dry red wine, such as merlot
1/4 cup defatted low-sodium chicken broth
3 ounces shiitake mushrooms, quartered
Thickener
1 tablespoon butter or margarine
2 tablespoons whole wheat flour
2 tablespoons balsamic vinegar
broth, if needed to thin

Rinse beef; dry with paper towels. Rub with olive oil. Combine rosemary, thyme, garlic, orange peel, salt and pepper and nutmeg. Rub this mixture into the beef.
Warm a non-stick skillet over medium-high heat. Do not add oil. Sear the meat on both sides about 3 minutes without turning; then turn and sear about 2 minutes on the other side.
Meanwhile, place celery, parsley and cilantro in the crockery insert of a 3 1/2 quart slow cooker. Place the leek halves on top (outside side up).
Transfer meat to the crockpot on top of the leek. Deglaze the skillet with the wine, follow with the broth. Add the mushrooms and stir briefly, about 1 minute. Pour this liquid into the crockpot, around the meat (do not rinse away the herb rub).
Cover and cook on LOW for 5 1/2 to 6 hours or on HIGH for 1 hour; then on LOW for 3 1/2 hours.
About 20 minutes before serving, combine the butter and flour to form a paste; add the vinegar. Set the crockpot on HIGH; stir in dabs of the thickener. Cover and cook about 15 minutes. Remove meat to platter. Thin the gravy if needed. Serve.
