ingredients

4 teaspoons olive oil
2 cloves garlic, minced
3 medium tomatoes, peel cored, seeded, and chopped
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 pinch cayenne pepper
1/2 cup dry white wine or chicken broth
3 cups water
1/2 pound cod or other white fish fillets, cut into bite-size pieces
salt and pepper
2 tablespoons minced fresh parsley

directions

Heat the oil in a large saucepan over medium heat. Add the garlic, tomatoes, basil, oregano, cayenne, and wine.

Cook, stirring occasionally, for 10 minutes.

Add the water. Bring the soup to a boil then reduce the heat to a low simmer. Gently stir in the cod and cook for 10 minutes or until the fish flakes easily with a fork. Adjust the seasoning as needed with salt and pepper.

Spoon the soup into individual serving bowls and garnish with parsley.
