ingredients

1 can (16 ounce size) broken sea urchin roe
1 can (32 ounce size) diced potatoes
1 can (16 ounce size) diced celery
2 quarts light cream
3 gallons fish stock
5 bay leaves
white pepper to taste
salt to taste
flour
butter

directions

Pan fry urchin roe in saucepan with butter until cooked (2-3 minutes).

Make soup stock, add ingredients, cook until potatoes are tender (not mush).

Strain ingredients, bring to boil, then whip in thickening agent until smooth. Add in cooked ingredients and stir lightly and serve.

For thickening, cook flour and butter in saucepan to make a thick sauce.
