Salmon And Spinach Soup

ingredients
2 tablespoons butter
1 medium onion, finely chopped
6 cups chicken stock
1 pound smoked salmon, thinly sliced
4 cups chopped fresh spinach leaves
salt, to taste
freshly ground black pepper, to taste
directions
Heat the butter in a large pot over moderate heat and saute the onions until tender but not brown, about 10 minutes.
Add the chicken stock and bring to a simmer. Add the remaining ingredients and simmer gently for 5 minutes.
