Radish Hash Browns

ingredients
1 tablespoon bacon drippings
1/2 small onion, diced
1 large bunch radishes, trimmed and diced
salt and pepper, to taste
1/4 teaspoon dried thyme
paprika if desired
directions
Saute onion in the bacon fat until soft, then add the radishes. Cook over medium heat until crisp outside, and soft inside, about 8 minutes.
Add seasonings near end of cooking time. Sprinkle with paprika just before serving.
It's not your traditional hash browns. The radishes provide a real unique flavor.

We loved the unique flavor of this recipe. I think, though, it'd be more accurately called "radish hash". And we did follow the recipe and dice the radishes but next time we make it we're going to just drop them in the food processor with the slicing blade. Dicing radishes was a *little* on the tedious side. It was a fun recipe to try!
