Slow Cooker Garlic Pork Roast And Sweet Potatoes

ingredients
3 1/2 pounds pork roast, boneless
1 tablespoon vegetable oil
1 teaspoon salt
1/2 teaspoon black pepper
4 cups sweet potatoes, cut in 1" pieces
1 medium onion, sliced
6 cloves garlic, peeled
1 cup fat-free chicken broth
directions
Remove fat from pork. Heat oil in 10-inch skillet over medium-high heat. Sprinkle salt and pepper over pork. Cook pork in oil about 10 minutes, turning occasionally, until brown on all sides.
Place sweet potatoes, onion, and garlic in 3 1/2- to 6-quart slow cooker. Place pork on vegetables. Pour broth over pork.
Cover and cook on low heat setting 8 to 10 hours or until pork and vegetables are tender.

A good, basic pork roast recipe for the slow cooker. I prefer, however, to leave the fatty side alone on the roast so it keeps the pork more tender while it cooks.
