Cranberry Nut Cake

ingredients
2 cups fresh cranberries, coarsely crushed
2 cups nuts, chopped
2 tablespoons orange peel, grated
4 cups all-purpose flour
2 cups sugar
3 teaspoons baking powder
2 teaspoons salt
1 teaspoon baking soda
6 tablespoons shortening or butter
1 1/2 cup orange juice
2 eggs, well beaten
directions
Combine cranberries, nuts, and orange peel. Set aside.
Mix dry ingredients in large mixing bowl. Cut in shortening. Stir in orange juice and eggs. Fold in cranberry mixture.
Spoon into two greased and floured loaf pans. Bake at 350 degrees F for 60 minutes or until wooden pick inserted in the center comes out clean. Cool 15 minutes.
