6 cups milk, divided
1/2 teaspoon Tabasco sauce, more if desired
3 tablespoons Worcestershire sauce
1 1/2 slice bacon, coarsely chopped
1/3 cup onion, coarsely chopped
2 tablespoons chicken bouillon granules
4 1/2 tablespoons cornstarch
1 jar (16 ounce size) Cheez Whiz
1 can (12 ounce size) beer
Combine 5 2/3 cups milk, Tabasco and Worcestershire sauces in a large pot. Stir to combine well.
In a heavy skillet, saute bacon until crisp; pour off half the fat. Add onion; stir and cook until wilted. Add chicken bouillon and cook, stirring 3 or 4 minutes.
Add bacon mixture to milk mixture and heat over medium heat. When milk begins to steam (at about 180 degrees F) combine cornstarch and reserved 1/3 cup milk, stirring until smooth. Stir mixture into hot milk mixture and cook, stirring frequently, until soup thickens.
Add Cheez Whiz, stirring almost constantly. Stir in beer, including the foam. Strain through a metal mesh strainer into a large bowl. If necessary, reheat.

this is a favorite of my wife and I. We first had it at the 94th in St. Louis before they closed for airport expansion. We don't strain the soup as we prefer the bacon and onion bits in the soup. We always use a dark beer such as Bass Ale. We have also found this to be a good cold soup served as an appetizer. We also prefer it served with a warm homemade honey wheat bread.

I had this for the first time at dinner last Friday with family at the 94th. I can honestly say that this will be forever on my list of favorites when I go there and now that I know the recipe, it will be something I make at home.

As a former General Mgr for this chain (Hendersons), in Jacksonville, Fl, I will attest that this soup was very popular and it's delicious. Use dark beer that has been opened at room temp for at least 6 hrs. Enjoy!
