Spanish rice is an easy accompaniment to a variety of Mexican and Tex-Mex dishes. Serve it alongside refried or borracho beans with enchiladas, burritos, tacos, and more. Or, serve it with roast chicken or grilled pork chops.
ingredients
3/4 pound ground beef
1 teaspoon salt
1 medium onion, chopped
2 cups tomato juice
1 3/4 cup water
1 cup uncooked long grain white rice
directions
Combine the ground beef and onion in a skillet over medium-high heat. Cook, stirring frequently, until the meat is browned. Drain off any excess grease.
Add the salt, tomato juice, water, and rice. Bring the liquid to a boil then cover the skillet and reduce the heat to a simmer. Let the Spanish rice cook for 25 minutes or until the liquid has been absorbed and the rice is tender.
Stir before serving and adjust the seasoning as needed. Serve hot.

Most of the more traditional spanish rice (actually, arroz rojo) isn't spicy it's simple like this recipe. I think people are used to more tex-mex styles. I like this one because it is simple and not overpowering so it can be served with other foods that are spicy to balance them.

I'd say this is a decent base recipe. Very plain though. Maybe if you are serving it with something spicy or elaborate but it needs dressing up in my opinion. Add some chopped chiles, black pepper, maybe use spicy v8 juice instead of tomato juice or at least add some hot sauce. That's more what I think of when I think of spanish rice.
