NY strip steaks (or your favorite cut) are rubbed with a combination of chili powder, salt, oregano, and coriander a couple hours before grilling.

1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon Mexican leaf dried oregano
1/2 teaspoon crushed coriander seeds
4 New York strip steaks
Combine the chili powder, salt, oregano, and coriander seeds. Rub evenly on the steaks.
Refrigerate the steaks with the rub on them for 2-3 hours.
Heat grill to medium-hot. Grill the steaks for 7-10 minutes or until desired doneness. Turn the steaks once halfway through the cooking time. Serve hot.
