ingredients
2 nice-sized filet mignons
1 small can fresh oysters
2 slices bacon
2 tablespoons melted butter
freshly ground black pepper
directions
With a sharp knife, cut a deep slash into each steak.
Gently poach oysters in own liquid for 2-3 minutes. Insert several well-drained oysters into the "pocket" of each filet. Wrap slice of bacon around each steak and secure with toothpick. Brush each generously with butter; sprinkle with a small amount of pepper.
Place steaks in hot broiler, allow to sear, turn, then cook. For a 1 1/2" steak, cook 5 minutes each side for rare, 7 minutes each side for medium.
