ingredients
8 ounces beef cube steaks
2 tablespoons vegetable oil, divided
1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon black pepper
2 slices provolone cheese
1/2 cup sliced onion
1 clove garlic, minced
green and red bell peppers
directions
In a skillet, cook steaks in one tablespoon oil over medium heat until no longer pink. Sprinkle with oregano, salt and pepper. Top each with a slice of cheese; cover and cook for one minute until melted. Remove and keep warm. Drain drippings.
In the same skillet, saute the onion, garlic and pepper rings in remaining oil until tender. Spoon over steaks.

I thought this tasted like a philly cheesesteak sandwich! It was sooo good!

We really liked the taste of this recipe - the cheese and veggies were great. However, cooking cube steak in this method tends to yield a chewier meat. While the flavor of the meat was good, we just didn't care for the texture. When you use cube steaks in something like chicken fried steak, the quick cooking method works, but not so well like this. This would also work fine with regular ground beef patties.
