ingredients
5 ounces dark rum
2 ounces lime juice
1/3 cup sugar
9 frozen peach cubes (see below)
3/4 cup crushed ice
fresh mint sprigs
FROZEN PEACH CUBES
1 pound fresh peaches
1 tablespoon lemon juice
directions
Into blender container, pour rum, lime juice, and sugar. Add peach cubes, one at a time, blending smooth after each addition. Gradually add crushed ice, blending smooth. Pour into stemmed glasses. Garnish with mint sprigs.
FROZEN PEACH CUBES: Halve and pit peaches, unpeeled. Slice into blender container; add lemon juice; puree.
Pour into ice cube tray; freeze. When solid, store peach cubes in freezer container until used.
