Sweet Potato Mash With Lime And Coriander

ingredients
1 1/2 pound sweet potatoes
1 lime, juiced
2 tablespoons extra virgin olive oil
1 small bunch coriander, chopped
sea salt
black pepper
directions
Preheat the oven to 375 degrees F. Put the sweet potatoes on a baking sheet and bake for about 40 minutes until tender (they may take longer).
Remove and leave until cool enough to handle, then split them open and scoop out the flesh into a bowl. Mash with a fork and add the lime juice, olive oil and chopped coriander.
Season with salt and pepper to taste. Serve warm or at room temperature.
