The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.
Bourbon-Mashed Sweet Potatoes

ingredients
1 pound sweet potatoes
2 tablespoons butter, room temperature
2 tablespoons brown sugar, (optional)
1/4 cup light or heavy cream, room temperature
1/4 cup good quality bourbon
salt and pepper
3 tablespoons snipped chives, for garnish
directions
Prick sweet potatoes several times with a fork and roast at 350 degrees F for 45 minutes or until tender.
As soon as you are able, using a potholder or kitchen towel, peel potatoes and add to work bowl of a food processor. Process until smooth. Add butter, sugar, cream and bourbon. Process to incorporate everything. Season to taste.
Garnish with chives, sprinkling them all over plate.

I found that there was some spice that would have improved the recipe -- I added cinnamon, nutmeg, and allspice to good effect. I also found that the amount of bourbon was *way* too high. I got a contact high off of the fumes when mashing everything together. I'd recommend cutting the alcohol content in half, compensating with cream/milk if too thick.
