Savory Mashed Sweet Potatoes

ingredients
2 pounds sweet potatoes, washed and dried
2 tablespoons softened butter
2 teaspoons pure vanilla extract
1 teaspoon ground ginger
1/2 teaspoon thyme leaves
1/4 teaspoon salt
directions
Pierce each potato twice with a fork so excess steam can escape while cooking. Microwave potatoes on HIGH 5 to 10 minutes or until tender, turning potatoes over halfway through cooking. Let stand 5 minutes or until cool enough to handle.
Remove the skin from the potatoes. Place potatoes and remaining ingredients in a large bowl, mash until smooth and well blended.
