Salmon With Yogurt-Dill Sauce

ingredients
Salmon
4 salmon fillets, skinned
4 sprigs fresh dill
1 lemon wedge, juice of
2 tablespoons white wine (optional)
salt and white pepper to taste
1 tablespoon butter
Sauce
8 ounces plain yogurt
1 tablespoon mayonnaise
1 teaspoon lemon juice
1 teaspoon dried dill
salt and fresh ground black pepper to taste
1 pinch cayenne pepper
directions
Place salmon in glass baking dish. Put one small piece of butter on each fillet or spray with cooking spray. Place one dill sprig on each or sprinkle with dried, season with salt and pepper. Squeeze lemon wedge over fish and drizzle with white wine.
Bake in a 400 degrees F oven for 15 minutes, or until it feels firm.
To make the sauce, whisk all the sauce ingredients together and refrigerate until ready to use. Can be made ahead and will last about a week in the refrigerator.
