A topping of olives, peppers, onion, tomato, and vinaigrette really dresses up these simple oven-baked salmon fillets.

1 1/2 pound salmon fillets
1/4 cup sliced black olives
1/4 cup chopped green bell pepper
1/4 cup chopped red onion
5 cherry tomatoes, quartered
1/4 cup sun-dried tomato vinaigrette salad dressing
Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil.
Place the salmon, skin-side down on the foil.
In a bowl, stir together the olives, bell pepper, onion, tomatoes, and salad dressing. Mix well then spoon evenly over the salmon fillets.
Place the fish in the oven and bake at 400 degrees F for 18-20 minutes or until the fish flakes easily with a fork.
Serve hot.

I'm always looking for new ways to serve salmon and I just LOVED the black olive salsa on this! I thought the vinaigrette might be too overpowering but it was perfect - just the right flavors. The salmon was nicely done, but always make sure to adjust the cooking time based on the thickness of the fish.
