Pistachios add a flavorful crunch to this simple broiled salmon recipe. Try it served with steamed vegetables and rice pilaf.

4 ounces pistachio butter
2 tablespoons finely chopped pistachios
4 ounces salted butter
2 ounces soft bread crumbs
2 tablespoons finely chopped green onions
2 tablespoons fresh lemon juice
4 salmon fillets
Preheat the oven broiler.
Combine the pistachio butter, pistachios, butter, bread crumbs, green onions, and lemon juice. Mix well.
Place the salmon fillets on a broiler pan or rimmed baking sheet. Top each fillet with the pistachio mixture.
Place the salmon under the broiler and cook until done (cook time will depend on the thickness of the salmon fillets). The fish should flake easily when done.
