ingredients
1 1/4 cup all-purpose flour
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/2 cup chilled butter, cut into small pieces
2 tablespoons ice water
1 beaten egg yolk
2 dashes hot pepper sauce
1 can (15 ounce size) black beans, rinsed, drained and divided
2 tablespoons sour cream
1 can (12 ounce size) Spam Lite, chopped
1 cup frozen corn, thawed
1 red bell pepper, chopped
1/2 cup chopped green onions
1 cup shredded hot pepper cheese
1 cup shredded cheddar cheese
1 tablespoon chopped cilantro
2 eggs, slightly beaten
1/2 cup milk
directions
Preheat oven to 350 degrees F.
For crust, in a food processor blend flour and spices together. Add butter and mix for 30 seconds. Add ice water, egg yolk and hot pepper sauce; mix until a ball forms.
Lightly spray a 10-inch springform or tart pan with nonstick cooking spray. Gently press dough into pan, covering bottom and 1/2 inch up the sides. Bake 20 minutes or until golden; cool on a wire rack.
Meanwhile, for filling, in a blender or food processor, puree 1 cup black beans with sour cream. Spread bean mixture over cooled crust.
In large bowl, combine Spam, corn, bell pepper, green onions, cheeses, remaining beans and cilantro. Place on top of pureed bean mixture.
In small bowl, slightly beat eggs and milk. Pour over Spam mixture. Bake 50-60 minutes or until knife inserted near the center comes out clean.
Let cool 15 minutes, then remove rim of pan. Cut into wedges and serve.
