ingredients
1 package (32 ounce size) frozen French fried potatoes, thawed
2 cups fat-free cheddar cheese, shredded
2 cups fat-free sour cream
1 can (10.75 ounce size) low-fat cream of mushroom soup
1 can (12 ounce size) Spam Lite luncheon meat, cubed
1/2 cup bell peppers, chopped
1/2 cup onions, chopped
1 cup white bread crumbs
directions
Preheat oven to 350 degrees F. Prepare a 13" x 9" pan with cooking spray; set aside.
In a mixing bowl, combine potatoes, cheese, sour cream, soup, luncheon meat, bell peppers, and onions. Mix well.
Spoon into prepared pan. Sprinkle with crumbs. Bake for 40 minutes, or until heated through.
