Baked Ham With Raisin Sauce

ingredients
12 pounds bone in fully cooked ham
GLAZE
1 cup brown sugar, packed
1 tablespoon dry mustard
whole cloves (optional)
RAISIN SAUCE
1/2 cup brown sugar, packed
1 teaspoon dry mustard
1 tablespoon cornstarch
1 1/2 cup water
1/4 cup vinegar
1/2 cup raisins
1 tablespoon butter
directions
Place ham, fat side up, on rack in shallow roasting pan. Insert meat thermometer.
Bake at 325 degrees F for 2 hours 10 minutes per pound to an internal temperature of 130 degrees F.
1/2 hour before end of baking time, pour off drippings; remove any skin.
Cut fat into diamond shapes. Insert cloves, if desired. Cover with glaze.
Return ham to oven for 30 minutes.
Remove and allow to rest 15 to 20 minutes for easier carving.
Raisin Sauce: Mix brown sugar, mustard, and cornstarch in saucepan. Add water, vinegar, and raisins. Cook and stir until thick. Add butter; blend.
