Tuscany Peasant Soup

ingredients
1 large white onion, finely chopped
1/2 cup virgin olive oil
5 cups chicken stock
6 cups chopped Roma tomatoes
2 tablespoons fresh basil
salt and pepper, to taste
6 cups cubed, hard, crusty, stale bread
directions
In large stockpot combine onion, olive oil, chicken stock, tomatoes, basil, salt and pepper. Simmer on medium heat for 30 minutes.
Add bread cubes, mix well and cook another 15-20 minutes.
Serve immediately. Garnish with sprigs of fresh basil if desired.
