ingredients
1/2 cup shredded or finely chopped carrot
1/4 cup finely chopped onion
1/4 cup thinly sliced celery
2 teaspoons margarine
1 cup low-sodium chicken broth
1/2 cup water
1 1/2 ounce uncooked egg noodles
directions
In 1-quart microwave-safe casserole, combine carrot, onion, celery and margarine. Cover. Microwave on high power 1 minute.
Add broth and water. Stir to combine. Microwave on high power, covered, 5 minutes longer. Stir in noodles. Microwave on medium (50 percent) power, covered, 3 minutes, stirring every minute.
Let stand 2 minutes until noodles are softened.
