ingredients
4 cups chicken stock
1 slice ginger
1 clove garlic, halved
1/2 cup chinese cabbage, shredded
1/3 cup tofu, coarsely chopped
1/3 cup mushrooms, thinly sliced
1/3 cup snow peas
1/3 cup bamboo shoots, slivered
1/3 cup water chestnuts, thinly sliced
1/3 cup carrots, sliced
directions
Combine the chicken stock, ginger, and garlic in a stock pot over medium-low heat. Bring to a simmer and let cook for 15 minutes.
Remove the garlic and ginger from the stock.
Add the tofu and vegetables to the stock. Bring the soup back to a simmer and let cook for 20 more minutes or until the vegetables are tender.
