ingredients

1 can (28 ounce size) diced tomatoes, undrained
1 large onion, chopped
1 package (10 ounce size) frozen cut okra, do not thaw
1/2 cup chopped green onions
1 cup beef broth or stock
1/4 cup sherry or vermouth
2 pounds red snapper fillet, cut in chunks
salt and pepper, to taste
fresh thyme, for garnish

directions

Combine the tomatoes, onion, okra, green onions, broth, and sherry in a crock pot. Mix well, then gently stir in the red snapper.

Cover the crock pot and cook on low heat for 2 hours or until the red snapper is cooked and flakey. Season to taste with salt and pepper (gently stir to mix in the spices).

Ladle the red snapper soup into individual soup bowls and garnish with fresh thyme, if desired.

common recipe questions

Can I use other fish in this recipe?

Yes, other fish that will work well include cod, mahi mahi, halibut, sea bass, grouper, or tilapia. Make sure to use thicker cuts of fish (like tilapia loins instead of fillets) otherwise they will disintegrate while cooking.

Can I substitute something for the okra?

The okra in this recipe adds both flavor and bulk to the recipe. You can substitute things like green beans, diced potatoes, or a combination of diced bell peppers and celery, if desired.

Are there non-alcoholic substitutes for the sherry/vermouth?

You can use apple cider vinegar or white grape juice as decent flavor substitutes. Or, just add extra broth to account for the liquid.

  1. NTexan REVIEW:

Only change I made was to add some cayenne pepper to give it some kick. Otherwise, fantastic snapper soup. At first I considered that it might be faster and just as easy to cook it on the stovetop instead of a slow cooker but I think the flavors melded better with the low and slow cooking. Really tasty. 100% will make again soon!
