ingredients
3 cups chicken broth
1/4 cup celery, finely chopped
1/4 teaspoon salt
1 small onion, finely chopped
2 tablespoons butter
1/2 cup peanut butter
1 cup milk
1/4 cup flour
1/4 cup water
1/4 cup peanuts, finely chopped
directions
Combine chicken stock, celery, salt, onion, butter and peanut butter in crock pot. Cover and cook on high for 2 to 3 hours.
Combine milk, flour and water until smooth. Add to crock pot. Cook on high for 20 minutes, stirring occasionally.
Garnish individual servings with chopped peanuts.

There are different kinds of peanut soup and I'm partial to the Virginia method with heavy cream. Some people may prefer other styles. This recipe makes a more onion-y peanut soup. I made it twice and enjoyed it both times. For round 2, I used half an onion and 1 cup of peanut butter and I liked it even better. The texture of the soup thickens over night making great leftovers. I like this recipe because it's very easy and tasty. I'll be making it again.
