Easy Asian Soup

ingredients
1 lime
2 cups chicken broth
1 can (14 ounce size) unsweetened coconut milk (light or regular)
4 slices (1/4 inch) ginger
2 tablespoons fish sauce
2 teaspoons Chinese chili sauce
1 boneless, skinless chicken breast, cut into bite-sized thin strips
4 green onions, thinly sliced
coriander, basil or mint leaves (optional)
directions
Remove peel from lime in wide strips. Add peel, plus juice from lime, chicken broth, coconut milk, ginger, fish sauce and chili sauce to a large saucepan. Cover, bring to a simmer and cook for 15 minutes.
Strain soup into another pot, discarding any solids. Bring soup back to a simmer, then add chicken and green onions. Cook 3 to 5 minutes or until chicken is cooked through. Garnish with coriander, basil or mint leaves if desired.

Delicious. Very good and authentic tasting. I used light coconut milk to keep the calories down (the full fat stuff is delicious but too fattening for me). I did cut the fish sauce down a little, just under 2 tbsp, maybe like 1 1/2. I was afraid it would be too strong otherwise. Instead of slicing the ginger I grated it as I really love ginger flavor mixed with coconut milk.

This was a very easy soup to prepare, and my dinner guests loved it! Went great with an Asian main dish and salad. Also did not take long to cook and I made it while we enjoyed potstickers. Would def do again.
