Banana Soup

ingredients
12 very ripe bananas
1 quart water
1/2 package tapioca
1/2 cup sugar
1 cup coconut milk
directions
Skin bananas and break into small pieces and place in medium size pot. Add water and boil slowly for approximately 15 minutes. Mash bananas in the pot with potato masher. Slowly pour in tapioca and simmer about 10 minutes, stirring occasionally. Stir in sugar and coconut milk. Remove from heat. May be served warm or cool.

The flavor is good, but the texture was like very thick oatmeal. I had to add a lot more coconut milk and water to get it to an appropriate texture. Is there something missing from the directions?
