Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

A perfect recipe for repurposing your leftover Thanksgiving turkey! I separated the white meat from the carcass to use for sandwiches. I used the uneaten dark meat for this casserole. Easy to make comfort food for Black Friday when you're busy with everything else Holidays related.
