ingredients
2 1/2 cups turkey breast meat, cooked and cubed
2 tablespoons margarine
1 cup onion, chopped
3/4 cup carrots, diced
3 cloves garlic, minced
8 ounces mushrooms, fresh, sliced
1/4 cup cornstarch
2 cups milk
1 can (14.5 ounce size) chicken broth
2 tablespoons dry white wine, or apple juice
1/3 cup Parmesan cheese, grated
2 teaspoons rosemary
1 1/2 cup wild rice, cooked
1 1/2 cup white rice, cooked
1 can (14 ounce size) artichoke hearts, drained, quartered
directions
Heat oven to 350 degrees F. Lightly grease a 3 quart casserole.
Melt margarine in large saucepan over medium-high heat. Add onion, carrots, and garlic; cook and stir 5 minutes. Add mushrooms; cook 1 minute. Set aside.
Place cornstarch in med saucepan; gradually add milk, chicken broth and wine, stirring until well blended. Cook and stir over medium high heat until mixture bubbles and thickens. Remove from heat; stir in Parmesan cheese and rosemary. Stir turkey, rice, artichokes, and milk mixture into mushroom mixture; mix well. Spoon into greased casserole. Cover.
Bake 350 degrees F for 45-60 minutes or until thoroughly heated.
