Ground Turkey Rice Casserole

ingredients
1 cup rice, uncooked
3 1/2 cups boiling water
1 pound ground turkey
2 celery ribs, diced
1 tablespoon brown sugar
4 tablespoons soy sauce, or to taste
1 can (4.5 ounce size) sliced mushrooms, drained
1/4 cup sliced almonds
directions
Preheat oven to 375 degrees F.
Place rice in 2-quart baking dish. Add the boiling water and set aside.
Brown the ground turkey and celery. Combine the brown sugar, soy sauce, and mushrooms with the ground turkey/celery mixture and add to the rice. Cover baking dish. Bake for 45 minutes, stirring midway through baking time.
Remove casserole from oven, sprinkle with the sliced almonds, replace cover and return to oven for an additional 10 minutes; check rice for tenderness and return to oven for another 5 - 10 minutes if necessary.

It's okay but I think it's a basic recipe. The almonds seem to be more for a change of texture than the flavor. I think next time I make it I'll include the dough for a bierock. Maybe I'll add a little onion too.
