8 pounds boneless turkey breast
vegetable oil
Kosher salt
black pepper

Southwest Stuffing

4 cups cubed stale baguette
4 cups cubed stale cornbread
2 cups low sodium chicken broth
1/2 pound breakfast sausage
1 tablespoon extra virgin olive oil
2 cups roasted, peeled, seeded and diced poblano chili pepper
2 cups diced onion
2 cups diced celery
1 stick unsalted butter
1/4 cup chopped fresh parsley leaves
1/4 cup chopped fresh sage leaves
2 eggs, beaten
Kosher salt
black pepper

Chipotle Glaze

1/2 cup orange juice concentrate
1/4 cup fresh lime juice
4 tablespoons unsalted butter, cubed
1 tablespoon minced chipotle chili peppers in adobo sauce
Kosher salt to taste

directions

Preheat oven to 375 degrees F. Coat a 9 x 13 inch pan with nonstick spray.

Prepare the southwest stuffing (see below). Form stuffing into a football shape in the prepared dish, building up height in the center. Drape turkey breast over the stuffing in the baking dish, pulling skin taut over meat.

Rub breast with oil, season with salt and pepper and roast 45 minutes. Rotate baking dish 180 degrees. Roast turkey breast another 30 minutes.

Brush surface of turkey breast with chipotle glaze (see below). Roast turkey breast until thickest part registers 170, about 15 more minutes. Apply glaze every 5 minutes until turkey is done. Remove turkey breast from oven, tent with foil and let it rest 15 minutes before carving.

For Southwest Stuffing: Soak baguette and cornbread cubes in broth in large bowl; set aside.

Saute sausage in oil in nonstick skillet over medium heat until browned, 3 to 4 minutes. Stir in poblanos; cook 1 minute. Add sausage mixture to bread cube mixture.

In same skillet, sweat onion and celery in butter over medium heat until soft, 8 minutes. Add to bread cube mixture. Mix in parsley, sage, eggs, salt and pepper.

For Chipotle Glaze: Heat concentrate, lime juice, butter, and chilies in small pan until butter is melted. Season with salt.
