Oatmeal-Pecan Pancakes

ingredients
3/4 cup old fashioned oatmeal
3/4 cup buttermilk
1/3 cup pecans, toasted and chopped
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/3 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 large egg
1/3 cup margarine or butter, melted and cooled
1 cup buttermilk
directions
Combine the oatmeal and the 3/4 cup of buttermilk together and set aside. Toast chopped pecans in frying pan over medium heat for approximately 5-6 minutes. Cool and set aside.
Mix together both flours, sugar, salt, baking powder and soda and the toasted and chopped pecans. Mix together the egg, buttermilk and melted margarine or butter. Combine the oatmeal, flour mixture and the buttermilk mixture. Let it rest for approximately 10 minutes before using.
Using a 1/4 cup measuring cup, pour onto griddle over medium heat and cook as you would any pancakes.

These pancakes were spectacular. Very hardy and flavorful. I served them with homemade blueberry compote. My husband loved them.
