Johnny cakes, also known as hoe cakes, are a cornmeal flatbread or pancake. Serve them like you would pancakes, with butter and maple syrup (or other toppings).

1 cup cornmeal
1 teaspoon salt
1 teaspoon sugar
1 1/2 cup boiling water
Combine the cornmeal, salt, and sugar in a bowl. Add the boiling water and stir until completely mixed, forming a thick batter.
Grease a griddle or skillet and heat to medium-high heat.
Drop the johnny cake batter by 1/4-cupfuls onto the hot griddle. Cook, without touching or turning, for 6 minutes.
Flip the johnny cakes over with a spatula and cook for 5 more minutes.
Serve hot with butter and maple syrup or jam.

As the recipe warns, the batter is THICK. This is not your typical pancake - it's more like a little polenta patty, but they are simple to make. The flavor is rustic, with a crispy outside and a nice creamy inside. I served mine with blackberry jam, and they were delicious.
