Blueberry Ice Cream Pancakes

ingredients
2 cups baking mix
2 extra large beaten eggs
1 cup French vanilla ice cream, melted
3/4 cup blueberries
directions
Combine baking mix with beaten eggs and melted ice cream. Mix thoroughly. Heat griddle to 350 degrees F.
Pour 1/2 cup batter onto griddle. Sprinkle berries on top each pancake. Flip pancake when edges begin to bubble. Remove from griddle when golden brown.

The ice cream made the pancakes incredible! Very good. I think it was the french vanilla flavor so maybe regular vanilla wouldn't do it. Vanilla bean might. This would work with other fruit too I think so I'll be trying it with strawberries next. So easy!
