ingredients
1 1/2 cup rice flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon xanthan gum
1 1/4 cup water
3 tablespoons vegetable oil
2 tablespoons honey
2 large egg yolks, beaten
2 large bananas, mashed
1/2 cup chopped walnuts
2 large egg whites
vegetable oil, for frying
directions
Combine flour, baking powder, salt and xanthan gum in medium bowl. Stir in water, oil, honey, egg yolks, banana and nuts.
Beat egg whites in medium bowl until stiff peaks form. Fold into batter.
Pour batter onto hot oiled griddle or skillet; cook on both sides until golden brown.

These are quite delicious I did half coconut milk half water and used coconut oil as my vegetable oil. Highly recommend to anyone because you cannot tell that they are gluten free. Be sure to cook slowly, the bananas will make the middle mushy if you try to cook them too fast. I recommend medium low heat.
