Apple Pancake Casserole

ingredients
2 tablespoons butter
3 large apples, peeled, cored, halved and thinly sliced
6 tablespoons granulated sugar
1 teaspoon ground cinnamon
3 eggs
1/2 cup flour
1/2 cup milk
1 tablespoon sour cream
1/4 teaspoon salt
1 teaspoon grated lemon zest
confectioners' sugar
directions
Preheat the oven to 400 degrees F.
Make the filling by melting the butter in an ovenproof 3-qt. casserole pan over medium heat. Add the apples, sugar and cinnamon and saute until the apples begin to soften and brown lightly, then remove immediately from the heat.
For the batter, place the eggs in a large bowl and beat until frothy. Then add the flour, milk, sour cream, salt and lemon zest and beat just until a smooth batter results.
Pour the batter over the apples in the casserole dish, then place it in the preheated oven. Bake until golden brown and risen, about 25 minutes or so.
Before serving (hot), dust with the confectioner's sugar.
